Quinoa - In a wrap, Southwest styleMy friend Brenda and I made these southwest-style quinoa wraps in about 20 -30 minutes. It might have taken us a bit longer, but only because we were filming our "How To" YouTube video (watch it below!) at the same time, so we might have stopped a few times because we were laughing or had to redo a shot. (It was our first shot with YouTube. Not easy!)

You probably have heard of quinoa by now (pronounced "keen-wa"). If not, I have done a quick blog post on it! I love rice, but I believe that quinoa is its perfect substitute. Why? Because, like rice it can be flavored in a multitude of ways and cooks easily but also because:
- Its gluten-free
- Packed with fiber + protein + nutrients
OK, here is the recipe:
½ cup of quinoa, well rinsed
1 cup of water or veggie broth
Pinch of salt
1 onion, chopped, any color
2-3 cloves of fresh garlic, finely chopped
2 tablespoons olive oil
4-6 oz. of chicken
Fresh bell peppers, chopped
1 can black beans
Wheat wraps or tortillas
Quinoa - Rinse quinoa in a strainer a couple of times. Heat a small saucepan, add olive oil, and add quinoa. Roast quinoa with chopped onion and garlic for a few minutes, or until onion is clear. Add water, bring to a boil, reduce heat and cover, simmer for 15-20 minutes, or until all water has been absorbed. Fluff with a fork and set aside.
Chicken - Cut chicken into small pieces. Chop half an onion and about 2 cloves of fresh garlic. Cook chicken on high heat for about 15 minutes, when is about being done, add onion and garlic and cook for about 5 more minutes.
2 tablespoons sour cream or Greek yogurt
½ to 1 full chipotle pepper, seeded and finely chopped
½ lime juice
Pinch of salt
Combine all ingredients, mix until well blended and smooth texture. Let it stand for a few minutes for flavors to blend.
Warm up tortilla or wrap. Spread dressing all over, as much as you like. Add quinoa and spread on one side of wrap, add chicken, beans, peppers. Squeeze lime all over and wrap it up. Cut into small pieces to share or eat it like a burrito!
